For many years founders and owners Lucy Arellano and Shawn Camden felt that Boulder was in need of a real authentic Mexican restaurant in Boulder. A place where you could eat tortas, tacos, tamales, gorditas, sopes, etc. the Mexican way. That is why the two decided to join forces to open Restaurante 100% Mexicano.

Lucy is the mastermind behind all the fresh and authentic style food we serve at Restaurante 100% Mexicano. Lucy was originally born in Rancho Grande, Mexico and moved to Boulder 13 years ago. She worked and managed different restaurants in Boulder and is know in the Mexican community as the best know Mexican cook in Boulder. She makes all the food taste amazing and fresh.
Shawn Camden
Owner
Shawn is principally responsible for marketing the business and overseeing all administrative duties. He co-founded and still works for one of the fastest growing and efficient nonprofit’s in the state of Colorado called Intercambio de Comunidades. He is president and owner of Spanish Institute www.spanish-institute.org, a Spanish language school for adults and children in Boulder. He also has a band called Los Cheesies www.loscheesies.com.
